    I absolutely love kulfi. If you haven’t tried it, kulfi is a decadent indian ice cream usually shaped in a cone and flavored with pistachio, cardamom, and sometimes mango.     Does anyone else feel like quarantine is a perfect excuse for weeknight baking? Not sure I needed an excuse, but since I’m home all the time, it has been nice to have sweets on the counter readily available as a treat after hours upon hours of zoom calls. This recipe is a perfect make-ahead dough that you can either bake all at once or bake in batches as you crave cookies.     (Air-Fried) Gobi Kofta

    When someone asks me what my favorite North Indian dish is, without hesitation I would say Malai Kofta. Though the delicious combination of fried paneer and potatoes is hard to pass up, I thought I’d try my hand at a *slightly* healthier version. These kofta are made of cauliflower (gobi) and use the magic of an air-fryer to get them nice and crispy. If you don’t have an air-fryer, feel free to bake them for 25 minutes at 425 F.     Celebrating Cinco de Mayo 🇲🇽 with the beautiful bounty of spring! Elote is one of my favorite dishes. The combo of sweet corn, spicy chili, salty cotija, and tart lime is just perfection! Traditionally mayo or crema are used in making elote, but I prefer yogurt for a healthier version of this craveable treat.     Gobi manchurian is a delicious Indo-Chinese fusion appetizer made with fried cauliflower in a spicy soy based sauce. It is always a favorite of mine at celebrations and weddings, but I don’t make it at home often because I rarely want to heat up a whole pot of oil.     Holi is just around the corner, so this is the perfect time to create a desi-inspired holiday treat. This panna cotta recipe uses the lovely earthiness of cardamom and ginger to create a desi twist on a classic italian treat.
