    Thomas the Tank Engine Cake

My adorable and amazing nephew Mokshay turned 2 this month and I was beyond excited to celebrate his Thomas the Tank Engine themed birthday. Let’s be serious, we all love time in a bouncy house, even in our 20s! For his birthday cake, I made two chocolate cakes (one 10 inch and one 8 inch round). The bottom layer was covered in rainbow jimmies (sprinkles) and the top layer was covered in white rolled fondant. The little thomas train on top is made of rice crispy treats covered in blue fondant. All of the smaller decorations were done in vanilla buttercream frosting or rolled fondant. Gluten Free Ski Cake

Two weeks ago I went to tahoe to celebrate a good friend’s birthday. My friend is entirely gluten free so I wanted to try to make her a birthday cake that she could safely enjoy. I really wanted to get the cake as moist as possible, but I also wanted to make sure it set up well. A Madhatter Cake!

This weekend I attended my friend Meera’s Madhatter themed bridal shower. She asked me to make her a whimsical and fun cake incorporating floral flavors in green, pink, and black. Here is the final product: The green & black layer is Lavender-Lemon cake and the pink layer is a rose cake. Both are covered with a vanilla buttercream frosting and vanilla fondant.  Decorations are in buttercream and fondant except the feathers which are not edible. (Recipes to follow…) To assemble the crooked cakes, I used the 10 inch and 8 inch Mad Dadder’s crooked cake pans. I highly recommend them if you are looking to create this effect. After the 10…
