    (Air-Fried) Gobi Kofta

    When someone asks me what my favorite North Indian dish is, without hesitation I would say Malai Kofta. Though the delicious combination of fried paneer and potatoes is hard to pass up, I thought I’d try my hand at a *slightly* healthier version. These kofta are made of cauliflower (gobi) and use the magic of an air-fryer to get them nice and crispy. If you don’t have an air-fryer, feel free to bake them for 25 minutes at 425 F.     Gobi manchurian is a delicious Indo-Chinese fusion appetizer made with fried cauliflower in a spicy soy based sauce. It is always a favorite of mine at celebrations and weddings, but I don’t make it at home often because I rarely want to heat up a whole pot of oil.
