    Mango Kulfi Pops! (no cook)

I absolutely love kulfi. If you haven’t tried it, kulfi is a decadent indian ice cream usually shaped in a cone and flavored with pistachio, cardamom, and sometimes mango. I have fond memories of my aunt making me kulfi as a kid in the traditional cone shaped Aluminum molds. I figured it was about time that I made it myself. After reading tons of recipes for kulfi, I found this one by Aarti Sequeira and thought it was worth adapting to more traditional flavors. To be honest, sometimes I post a recipe that feels like cheating. This is definitely one of those times. This recipe involves absolutely no cooking. Instead,…

    Food Influencers

I’ve had always had a passion for food, even wanting to become a professional chef for most of my childhood. When I was really young, I watched endless hours of the early Food Network great chefs, Ready Set Cook, and Julia Child on television, hoping I could gain a little insight into their genius. I would host my own nightly cooking shows in my kitchen to an audience of teddy bears, making nonsensical “treats” in the microwave and freezer because I was too young to operate the stove alone. Brown butter chocolate chip sea salt cookies

Does anyone else feel like quarantine is a perfect excuse for weeknight baking? Not sure I needed an excuse, but since I’m home all the time, it has been nice to have sweets on the counter readily available as a treat after hours upon hours of zoom calls. This recipe is a perfect make-ahead dough that you can either bake all at once or bake in batches as you crave cookies. They have a beautiful nutty flavor from the brown butter and a salty sweet balance from the sea salt and semisweet chocolate. YUM! Ingredients: 1 C (16 T) unsalted butter (I like kerrygold butter best) 3/4 C dark brown…

    (Air-Fried) Gobi Kofta

When someone asks me what my favorite North Indian dish is, without hesitation I would say Malai Kofta. Though the delicious combination of fried paneer and potatoes is hard to pass up, I thought I’d try my hand at a *slightly* healthier version. These kofta are made of cauliflower (gobi) and use the magic of an air-fryer to get them nice and crispy. If you don’t have an air-fryer, feel free to bake them for 25 minutes at 425 F. They won’t get as crispy as the fried version, but I think that’s a worthwhile trade off for your arteries. Added bonus: this recipe is vegan! Kofta Ingredients: 3.5 C…
