    Almond Coco-Choco-Bites

    I love snack foods, but sometimes it’s hard to resist opening a bag of chips and feeling hungry again 20 minutes later. This recipe fulfills my (constant) chocolate craving and still doesn’t make me feel like I’m cheating.  I especially love them on weeks like this where I am exhausted and constantly running around.     Spinach Almond Pesto

    I love love love fresh pestos- they taste fresher and are much healthier than store bought versions. You all probably know about my love for pesto given my previous Kale & Cashew pesto recipe. This recipe is similar, but has a slightly richer flavor given the almonds. It is also a beautiful, bright color which is fun! Ingredients: 2 C spinach (uncooked) 2 T olive oil 1/3 C sliced almonds 1 t salt 3 cloves garlic 4-5 basil leaves (to brighten up the flavor- can be omitted) 2 T water (room temp) Recipe: 1.     Feta & Almond stuffed delicata squash

    It’s fall in San Francisco, which really means we are experiencing amazing 80 degree weather and enjoying the sunshine. Yes, I do intentionally try to make all of you suffering through any sort of cold jealous. No shame. This week, my CSA (community supported agriculture) farm brought me a wide array of fall fruits and veggies including Delicata Squash. I am a huge fan of squash in general, especially butternut squash and small summer squashes.
