    Almond Coco-Choco-Bites

    I love snack foods, but sometimes it’s hard to resist opening a bag of chips and feeling hungry again 20 minutes later. This recipe fulfills my (constant) chocolate craving and still doesn’t make me feel like I’m cheating.  I especially love them on weeks like this where I am exhausted and constantly running around.     When I was in college, I loved going to this coffee shop in La Jolla called Pannikin (http://pannikincoffeeandtea.com/) They had a great little patio area, free wi-fi and these delicious little pastries that were made of graham cracker, nuts, coconut, and many types of chocolate. This is my version of that great dessert! This is a really easy recipe that doesn’t involve much measuring or accuracy. It’s a good one for a beginner.     Superbowl peanut butter cups!

    I wanted to make something quick and easy to take to a Superbowl party. I wasn’t in the mood to make something elaborate because since the 49ers were eliminated, I’ve been very depressed about football. These are quick and easy. Ingredients 1 C graham cracker crumbs 1 C peanut butter (unsalted)- pref the chunky kind with peanuts 1/2 C powdered sugar 5 oz Chocolate chips 2 T butter melted Some coconut to decorate Recipe 1.
