    You really can’t go wrong with sweet potatoes. They are packed with vitamin A, delicious in flavor, and super versatile. This tart combines sweet potato, spinach, and a few other ingredients you probably have at home!     Mushroom & Spinach Risotto

    Risotto used to be one of my go-to meals after work, but for some reason it fell off my radar for a while. Well, it’s back in full force and has made a strong resurgence in my life. I know risotto can seem intimidating, but honestly, if you are patient, it makes a wonderful fall meal. A few notes: 1.     Spinach Almond Pesto

    I love love love fresh pestos- they taste fresher and are much healthier than store bought versions. You all probably know about my love for pesto given my previous Kale & Cashew pesto recipe. This recipe is similar, but has a slightly richer flavor given the almonds. It is also a beautiful, bright color which is fun!     I hosted a Friendsgiving two weeks ago to celebrate the arrival of the holidays with some of my closest girlfriends in San Francisco.
