I absolutely love Christmas! The flavors and smells and sounds (yes, even the cheesy music) are so fun! We just got our Christmas tree and started putting up the lights, ornaments, stockings, etc. I’m also super excited to be traveling during this holiday season. I’m spending a week in india to celebrate a close family friend’s wedding and then ten days in Indonesia traveling with two high school buddies. Exciting times ahead! When I was in college, I loved going to this coffee shop in La Jolla called Pannikin (http://pannikincoffeeandtea.com/) They had a great little patio area, free wi-fi and these delicious little pastries that were made of graham cracker, nuts, coconut, and many types of chocolate. This is my version of that great dessert! This is a really easy recipe that doesn’t involve much measuring or accuracy. It’s a good one for a beginner. Mint oreo cheesecake bites
My brother’s birthday party was Saturday so I wanted to make a bite sized dessert that his friends could enjoy. My brother LOVES Andes mints so it was great that my local grocery store started carrying Andes Baking chips which are absolutely amazing! This recipe is an adaptation of something I found on browneyedbaker (an awesome food blog!) but I prefer to do it this way because it avoids the shortening.
