    Elote

Celebrating Cinco de Mayo 🇲🇽 with the beautiful bounty of spring! Elote is one of my favorite dishes. The combo of sweet corn, spicy chili, salty cotija, and tart lime is just perfection! Traditionally mayo or crema are used in making elote, but I prefer yogurt for a healthier version of this craveable treat. Ingredients: 4 ears of corn 1 lime in wedges, plus zest 1 tsp cayenne 1 tsp chili powder 1/2 tsp salt 1 tsp cumin 1/2 tsp garlic powder 1/3 C greek yogurt cilantro to garnish cotija to garnish (or grated parmesan in a pinch) Recipe: Grill corn on an open flame until charred. Gobi Manchurian

Gobi manchurian is a delicious Indo-Chinese fusion appetizer made with fried cauliflower in a spicy soy based sauce. It is always a favorite of mine at celebrations and weddings, but I don’t make it at home often because I rarely want to heat up a whole pot of oil. The key to a good gobi manchurian is a crispy batter and a spicy and salty sauce. Here is the recipe to make both! Ingredients 8 ounces of beer 1 C all-purpose flour 1 t salt, pepper, and cayenne 1 head cauliflower cut into florets Oil for frying 3 cloves garlic, minced 1 T ginger minced 1/3 C green onion 1…

Spicy Vegetarian Wontons in Chili Sauce

Gong Xi Fa Cai! Happy lunar new year of the Monkey! I thought the new year was a prime opportunity to post the recipe for veggie wontons in chili sauce. Traditionally, these wontons are served at filled with pork. They always look so spicy and yummy, but since I don’t eat pork, I had to search out a vegetarian alternative. I found one place in Palo Alto (Jing Jing) that makes a great vegetarian version and fell in love with these ever since. This recipe yields about 40 wontons. Wrapping them is a bit time consuming, but you can do it with a movie or music on in the background…

    Buffalo Chicken Dip

The Super Bowl might as well be renamed “National Cheat-Day” because it’s the day everyone skips out on their healthy eating, trendy diets to eat amazing, delicious, unhealthy-but-totally-worth-it food. This recipe is absolutely no exception. Delicious? Yes! Healthy? Nope! Regardless, it does a great job of mimicking the flavor of buffalo chicken wings without the hassle and mess. Ingredients: 8 oz cream cheese (at room temp) 2 T ranch dressing or blue cheese crumbles 2 C shredded cheese (I used cheddar and mozzarella blend) 1/2 C frank’s red hot sauce (can adjust if you want more heat, but this is my favorite amount!) 2 Chicken breasts- cooked and diced finely…

    “PF Chang’s” Lettuce Wraps

PF Changs may not be authentic Chinese food, but I must admit, I really really love it. I’m a HUGE fan of their veggie lettuce wraps and hot & sour soup. The wraps are warm, a little spicy, and filled with yumminess that you don’t have to feel too guilty about enjoying. Plus, lettuce wraps make an easy party appetizer! I’ve been making lettuce wraps for years, so I was surprised when I realized I had never posted the recipe.
