    Feta Shakshuka

    I first ate Shakshuka when I visited Turkey in 1997. The dish is common in the middle east, with Tunisian origin and is basically comprised of poached eggs in a slightly spicy tomato sauce. I’m not even a huge fan of eggs (except for occasional runny eggs like sunny side up and poached at brunch), but for some reason this combination of eggs and tomatoes just works well for me.     Mushroom & Spinach Risotto

    Risotto used to be one of my go-to meals after work, but for some reason it fell off my radar for a while. Well, it’s back in full force and has made a strong resurgence in my life. I know risotto can seem intimidating, but honestly, if you are patient, it makes a wonderful fall meal. A few notes: 1.     I love love love love a well made paella. Tapas are amongst my favorite foods, and paella is certainly a dish I can’t resist when I go to a spanish restaurant. There are some great places for Spanish food in SF, but that doesn’t stop me from trying to recreate paella at home. This is only my second time making paella, so I’m bound to change and improve this recipe, but thought I’d share the basic version.     Enchiladas are a really easy dinner to make and much of it can be done in advance. It’s a great option for a group because you can make it in a large tray and serve several people at once.
