Almond Coco-Choco-Bites

Almond Coco-Choco-Bites

I love snack foods, but sometimes it’s hard to resist opening a bag of chips and feeling hungry again 20 minutes later. This recipe fulfills my (constant) chocolate craving and still doesn’t make me feel like I’m cheating.  I especially love them on weeks like this where I am exhausted and constantly running around. Ingredients: 1/2 C old fashioned oats raw 1/2 C almond butter (I used Justin’s almond butter which I got free from Thrive!!) 1/2 C sweetend coconut flakes, toasted 1/3 C flaxseed meal 1/2 C semisweet chocolate chips 1 t vanilla...

Sweet ‘N Spicy Roasted Chickpeas

Sweet ‘N Spicy Roasted Chickpeas

I’ve been told over and over that I eat like a rabbit. I like to snack on small things and if you visit me in lab you’ll often see a bowl of nuts, fruits, trailmix, etc on my desk. I think I get this habit from my dad; he rarely eats full meals especially lunch. Though this snack is not Murrali (my dad) approved since he is allergic to chickpeas. The combination of roasted chickpeas with soy, honey, and sriracha make this snack delicious and totally addicting. Enjoy! Ingredients: 1 can of chickpeas, drained and rinsed olive oil spray 2 t honey 2 t soy sauce...

Almond & Date Energy Bites

Almond & Date Energy Bites

I never would have considered myself a date person, but I seriously love these little energy bites. They are a great snack at my desk or before/after a workout and they’re healthy. My cousin had asked me how to make them, so I finally got around to writing this up; it’s so easy it hardly counts as cooking! Ingredients: 10 dates (pitted) 2 T almond butter (can substitute an alternate nut butter- I love cashew!) 1/3 C cocoa powder or chocolate protein powder Recipe: 1. Remove the seed from the dates using a sharp knife. 2. Combine all ingredients in a food...

Spicy Vegetarian Wontons in Chili Sauce

Spicy Vegetarian Wontons in Chili Sauce

Gong Xi Fa Cai! Happy lunar new year of the Monkey! I thought the new year was a prime opportunity to post the recipe for veggie wontons in chili sauce. Traditionally, these wontons are served at filled with pork. They always look so spicy and yummy, but since I don’t eat pork, I had to search out a vegetarian alternative. I found one place in Palo Alto (Jing Jing) that makes a great vegetarian version and fell in love with these ever since. This recipe yields about 40 wontons. Wrapping them is a bit time consuming, but you can do it with a movie or music on in the...

Lemon bars (First they’re sour, then they’re sweet)

Lemon bars (First they’re sour, then the...

I first published this post in 2012, but decided to update the recipe a little bit. Enjoy! I absolutely LOVE LOVE LOVE all things lemon. You can almost always find a bag of sour patch stashed somewhere in my room because I crave sour flavors constantly! These bars have (in my opinion) the perfect amount of sour and sweet and are super easy to make. Ingredients: 1/2 C softened butter 1 C white sugar 1 and 1/8 C all-purpose flour 2 lemons juiced (about 1/4 C juice) 2 eggs 1 t. vanilla Recipe for crust: 1. Preheat oven to 350 degrees F 2. Combine butter, vanilla, 1/4 C...
