    I’ve been told over and over that I eat like a rabbit. I like to snack on small things and if you visit me in lab you’ll often see a bowl of nuts, fruits, trailmix, etc on my desk.     Almond & Date Energy Bites

    I never would have considered myself a date person, but I seriously love these little energy bites. They are a great snack at my desk or before/after a workout and they’re healthy. My cousin had asked me how to make them, so I finally got around to writing this up; it’s so easy it hardly counts as cooking! Ingredients: 10 dates (pitted) 2 T almond butter (can substitute an alternate nut butter- I love cashew!) 1/3 C cocoa powder or chocolate protein powder Recipe: 1.     Lemon quinoa kale salad

    This is my go to salad for work. There is nothing complicated about it, but it’s healthy and it preserves well in the fridge. I honestly make it all the time because it’s one of those salads that doesn’t leave you feeling hungry two hours after you eat it. The quinoa and chickpeas give it lots of protein which is great for a vegetarian salad.     I love tortilla soup. I mean, in general I’m not a big soup person, but of soups- this one is definitely up there.     Spicy Goat Cheese Arrabiata Sauce

    I absolutely love arrabiata sauce. For those of you who haven’t tried it, it’s a tomato based pasta sauce with a little kick! I think it’s a nice way to spice up simple pastas like spaghetti or penne. I highly recommend making your own pasta sauces if you have the time. They don’t spoil as quickly as some store bought jars and you can freeze them in small quantities and use them whenever you feel like. Plus, they make great gifts!     There is a restaurant called Local Kitchen right around the corner from my house and they serve the most amazing dijon caper brussel sprouts. I’ve tried to recreate them about 10 times and feel like I’ve finally come up with a good recipe that pretty closely replicates the flavor.     Homemade Hummus

    Hummus might possible be my favorite snack. It’s sad, because my father is deathly allergic to chickpeas, but seriously it’s just SOO good. It’s healthy, comes in lots of flavors, and can go well on chips, pita, veggies, sandwiches, etc. I generally buy Trader Joe’s spicy or cilantro hummus. Both are really flavorful! But real talk, it’s incredibly easy to make hummus on your own and you can avoid the preservatives, bad oils, and excess salt. Why not?!?     It’s fall in San Francisco, which really means we are experiencing amazing 80 degree weather and enjoying the sunshine. Yes, I do intentionally try to make all of you suffering through any sort of cold jealous. No shame. This week, my CSA (community supported agriculture) farm brought me a wide array of fall fruits and veggies including Delicata Squash. I am a huge fan of squash in general, especially butternut squash and small summer squashes.     Kale Chips

    Kale gets a bad reputation. People tend to have strong negative feelings towards it because of its outward bitterness and rough texture, but it’s actually a really great green. Beyond being rich in fiber, iron, and antioxidants it really can be flavorful it treated well. I like to use it in salads or sauté it in stir frys, etc., but this preparation is probably my favorite.     Flaxseed Banana Walnut Bread

    Yes, I have already explained my dislike for browning bananas pretty extensively in this post on Banana chocolate walnut bread. That is a great recipe to get rid of some browning bananas and make a sweet, delicious snack. Unfortunately, with the combination of the chocolate, the white sugar, the butter, it’s not the healthiest option.
